Obituary of Eileen M Rosseter
Eileen Mary Lynch-Rosseter, 92, of Lexington, NY, departed on her journey to heaven on March 16, 2024 in Catskill, NY.
A funeral mass will be held at St. Theresa of the Child Jesus Roman Catholic Church, 5188 State Route 23, Windham, NY, on Saturday, March 23, 2024 at 10:30 AM. Wearing a mask is encouraged. Decker Funeral Home has been entrusted with the arrangements. A burial will follow at Maplewood Cemetery, Route 23A, Jewett, NY.
Eileen was born in the Bronx to Frederick and Agnes Wunder Rappleyea on December 29, 1931. She attended school in Fordham, summer vacations at Putnam Lake, NY, where she settled down to raise her family. After relocating in Ashland with her husband Mike Rosseter and family, she became a successful restauranteur at two locations, The Country Kitchen in Windham, and finally Eileen’s Snack Bar at Mosquito Point in Lexington, NY.
Eileen’s Snack Bar evolved as a cornerstone business of Lexington, frequented by residence and travelers alike. Eileen's one room snack bar expanded into a restaurant, full kitchen, apartment, outdoor dining deck and sporting goods store with the skilled construction / building of her husband Mike. Eileen‘s home cooking cuisine, served construction workers, farmers, truck drivers, professionals, locals and travelers, contributing to the success of the regions attractions.
She loved to sing, and as a natural born entertainer, running her restaurant came from her heart. Her customers were her friends.
Eileen is survived by her sister, Mary Hurley of Belfast, Maine; four of her five children, Thomas Lynch of Ashland, Eileen, Rehberg of Windsor, Kathleen Lynch of Schuylerville and Maureen Lynch of Latham; her nephews John, David, Michael, Patrick and Dan Hurley; her niece, Eileen Cristiano; 8 grandchildren; 10 great grandchildren and three stepchildren Duane, Shane and Cindy Rosseter.
Eileen is predeceased in death by her parents; her husband, Mike; her brother and sister, William and Lorraine Wunder; and son, James Lynch.
